Ingredients
- 1 cup packed brown sugar
- ½ cup sugar
- ¾ cup vegetable shortening
- ¼ cup water
- 1 large egg (or ¼ cup egg substitute)
- 1 teaspoon vanilla extract
- 3 cups old-fashioned oats
- 1 cup flour
- ½ teaspoon baking soda
- 1 teaspoon kosher salt (optional)
Steps
- Preheat oven to 350°F. Lightly coat cookie sheet(s) with spray.
- Add to large bowl: both sugars, shortening, water, egg, and vanilla; beat with hand mixer until creamy. Combine in separate large bowl: oats, flour, baking soda, and 1 teaspoon salt (if desired).
- Add oats mixture to shortening mixture; mix well. Drop by rounded tablespoons onto prepared cookie sheet(s), about 2 inches apart.
- Bake 12–14 minutes, until light golden brown. Let stand 1 minute before removing cookies to racks to cool. Makes 6 dozen.
Other Preparation Methods
- CHUNKY OATMEAL COOKIES: Stir in 1 cup of any of the following with oats: semi-sweet chocolate chips, raisins, chopped walnuts, chopped dates, or shredded coconut.
- CINNAMON SPICE OATMEAL COOKIES: Add 1 teaspoon ground cinnamon, and ½ teaspoon ground nutmeg to flour mixture.
