Lentil Garden Salad

Ingredients
  • 1 cup lentils
  • 1 large carrot, chopped
  • 1 lemon, for juice
  • ¼ cup mojo marinade
  • 2 tablespoons water
  • 1 teaspoon dried oregano
  • 8 oz prediced fresh tomatoes (1 ¼ cups)
  • 1 cup trinity mix (fresh diced onions, bell peppers, celery)
  • 1 cup reduced-sodium cannellini beans, drained/rinsed
  • ½ cup diced pimientos
  • ¼ cup prediced green onions
  • 1 ½ teaspoons reduced-sodium rotisserie chicken seasoning
Steps
  1. Prepare lentils following package instructions. Chop carrot. Squeeze lemon for juice (2 tablespoons). Drain lentils and chill for 10 minutes.
  2. Whisk in large bowl: lemon juice, mojo, water, and oregano until blended.
  3. Stir remaining ingredients (including lentils) into dressing until well blended. Chill 30 minutes to blend flavors. Serve.
