Ingredients

  • 1 lb frozen alligator fillets, thawed and finely chopped
  • ¾ cup buttermilk
  • 2 teaspoons blackening seasoning
  • 1 ½ cups hush puppy mix
  • Oil, for frying
  • Ranch dressing (optional, for dipping)

Steps

    1. Chop alligator. Combine buttermilk and seasoning; add alligator pieces. Let stand 15 minutes. Stir in hush puppy mix until combined.
    2. Heat oil in Dutch oven on medium-high until 350°F. Form 1-inch alligator scoops using a portion scoop (or two spoons) and carefully drop into oil (in batches). Cook 3–4 minutes or until golden and 165°F. Drain on paper towels. Serve with ranch dressing, if desired.
Other Preparation Methods
    • Grill: Preheat grill. Place in bowl: 1 lb alligator, 1 cup pineapple chunks, and ½ cup teriyaki marinade; marinate 30 minutes. Thread alligator and pineapple chunks onto 6-inch skewers. Grill 4–5 minutes on each side and until 165°F.
    • Stovetop: Cut 3 links smoked sausage into slices. Preheat large stockpot on medium 2–3 minutes. Place sausage, 15 oz frozen gumbo vegetables, 1 (14.5-oz) can diced tomatoes with garlic, and 1 lb chopped alligator in pot. Cover and simmer 8–10 minutes and until alligator is 165°F.
