Caramelized Onion and Apple Baked Brie

Ingredients
  • 2 large sweet onions
  • 1 tablespoon unsalted butter
  • 2 teaspoons fresh thyme
  • Parchment paper
  • 2 large Granny Smith apples, divided
  • ¼ cup apple juice
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 (8 oz) Deli Brie cheese round
  • 1 (8 oz) Bakery baguette
Steps
  1. Slice onions thinly (3 cups). Melt butter in large sauté pan on medium-high. Add onions; sauté 5 minutes or until tender. Reduce heat to medium-low and cook 45 minutes, stirring often, until onions are golden. Chop thyme, leaves only.
  2. Preheat oven to 350°F. Line baking sheet with parchment paper. Peel and core 1 apple then chop finely (1 cup). Stir apples into onions; cook 10 minutes. Add apple juice, stirring until liquid evaporates; stir in thyme, salt, and pepper.
  3. Unwrap Brie; cut off top rind. Place Brie in 2-quart baking dish, top with onion mixture, then place dish on baking sheet; . Bake 12–15 minutes until cheese melts. Slice baguette and cut remaining 1 apple into wedges. Transfer baking dish to serving platter; arrange bread and apple slices around dish. Serve.
Note: Some Brie packages have wooden bases that can be used for heating the cheese. It's a unique way to serve the cheese, if available.
