Ingredients

- 2 lemons, for juice
- 1 cup fig preserves
- 2 teaspoons Dijon mustard
- ½ cup olive oil

- 2 persimmons (or oranges), sliced
- ½ cup Manchego cheese, cut into small pieces
- ¼ cup toasted pistachios, coarsely chopped
- 4 cups bitter greens (such as curly endive, or endive with radicchio)
- 2 cups mixed sweet apple slices
- 1 cup seedless red and green grapes
Steps
- Prepare dressing. Squeeze lemons for juice (¼ cup). Combine figs, lemon juice, and Dijon in a medium bowl; whisk until blended. Slowly add olive oil, whisking thoroughly, until incorporated.
- Prepare salad. Slice persimmons. Cut cheese into small pieces; chop nuts.
- Arrange bitter greens on serving platter; top evenly with persimmons, apples, grapes, cheese, and pistachios. Drizzle with ½ cup dressing. Serve.
