Ingredients
  • 1 large yellow onion, coarsely chopped
  • 2 medium poblano peppers, coarsely chopped
  • 2 (16-oz) cans navy beans, drained
  • 1 tablespoon canola oil
  • 2 lb fresh turkey tenderloins (or boneless turkey breast)
  • 12 oz mild Italian chicken sausage, casing removed
  • 1 (1.25-oz) package white chicken chili seasoning
  • 1 ½ cups reduced-sodium chicken broth
  • ½ cup whole milk (or half-n-half)
  • 1 cup shredded cheddar cheese
Prep
    • Chop onions and peppers. Drain beans.
    • Remove casing from chicken sausage (discard casing).
Steps
  • (MULTICOOKER: Active Time: 25 minutes, Total Time: 1 hour, 10 minutes)

    1. MULTICOOKER: Set multicooker to the Sauté setting and preheat 2–3 minutes. Pour oil inside, then add turkey; cook 4 minutes, turning occasionally, or until browned. Remove turkey from multicooker. Place chicken sausage inside multicooker; cook 5–6 minutes, stirring to crumble meat, or until brown and no pink remains. Add seasoning, onions, peppers, beans, and broth; stir to combine. Nestle turkey into chicken sausage mixture, then lock lid into place. Set multicooker to the Meat/Stew setting; cook 45 minutes until turkey is pull-apart tender (165°F).
    SLOW COOKER: Preheat large sauté pan on medium-high 2–3 minutes. Pour oil in pan, then add turkey; cook 4 minutes, turning occasionally, or until browned. Remove turkey from pan. Reduce pan heat to medium, then add chicken sausage; cook 5–6 minutes, stirring to crumble meat, or until browned and no pink remains. Place in slow cooker: chicken sausage, seasoning, onions, peppers, beans, and broth; stir to combine. Nestle turkey into chicken sausage mixture, then cover with lid. Cook on HIGH for 3–4 hours (or LOW for 6–7 hours) until turkey is pull-apart tender (165°F).
  • Remove turkey and shred with two forks, then return to chili. Stir in milk; simmer 2–3 minutes to blend flavors. Top with cheese; serve.
