Ingredients
- 14 tablespoons unsalted butter, softened
- 2 cups freeze-dried strawberries (or mixed berries), coarsely crushed
- Parchment paper
- 1 cup flour
- ¾ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon kosher salt
- 2 ½ cups old-fashioned oats
- 1 cup sugar
- ¼ cup brown sugar
- 1 large egg (or ¼ cup egg substitute)
- 1 teaspoon vanilla extract
- 1 cup white chocolate morsels
Steps
- Set butter out to soften; crush strawberries. Line baking sheet with parchment paper. Combine flour, baking powder, baking soda, salt, and oats.
- Beat butter and sugars with electric mixer until pale yellow and fluffy. Add egg and vanilla and beat until blended. Stir in flour mixture, in batches, until dough forms. Stir in white chocolate, then stir in strawberries until combined. Chill dough 20 minutes.
- Preheat oven to 350°F. Scoop (or form) dough into 1-inch balls; place on baking sheet 2 inches apart. Bake 10–12 minutes or until edges are browned and centers are set. Allow to cool 3 minutes on baking sheet before transferring to wire racks to cool completely. Serve.
