Sweet and Sour Green Beans

Ingredients

  • 1 small yellow onion
  • 1 bag fresh green beans (12–16 oz)
  • 4 slices thick-cut bacon
  • 8 oz sliced fresh baby portabella mushrooms
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon granulated sugar
  • ¾ teaspoon kosher salt
  • ½ teaspoon pepper

Prep

    Steps

      1. Slice onion thinly. Trim beans if needed, then cut in half horizontally. Chop bacon into 1-inch pieces (wash hands). Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Place bacon in pan; cook and stir 6–8 minutes until browned. Remove bacon, reserving 3 tablespoons fat in pan.
      2. Add beans to pan; cook and stir 5 minutes. Stir in onions and mushrooms; cook and stir 5 more minutes.
      3. Stir in vinegar, sugar, salt, and pepper; cook and stir 1 minute or until sugar dissolves. Stir bacon into bean mixture. Serve.

    Spinach Pineapple Salad

    Ingredients

    • 1 bag baby spinach (or arugula), 4–6 oz
    • ⅓ cup praline pecans
    • 4 oz pineapple chunks
    • ½ cup crumbled feta cheese
    • ¼ cup poppy seed dressing

    Steps

      1. Place spinach in salad bowl. Chop pecans and pineapple finely; add to spinach.
      2. Add feta and dressing; toss and serve.
