    Ingredients

    • 4 cups fresh watermelon chunks
    • 1 seedless cucumber
    • 1 red chili (or jalapeño) pepper
    • 2 shallots
    • ⅓ cup lightly salted cashews (about 2 oz)
    • 0.25 oz fresh mint
    • 0.25 oz fresh basil
    • ¼ bunch fresh cilantro
    • ½ cup refrigerated ginger dressing, divided
    • 4 (16 oz) glass jars with lids

    Steps

      1. Cut watermelon and cucumber into 1-inch cubes. Chop pepper finely, removing membranes and seeds if desired; chop shallots finely. Chop cashews, mint, basil, and cilantro coarsely.
      2. Divide ingredients among jars in this order: dressing, watermelon, cucumbers, shallots, peppers, mint, basil, cilantro, and cashews. Seal jars and chill 30 minutes (or overnight). Shake before serving.
