Watermelon, Feta, and Pickled Onion Salad

Ingredients

  • 4 oz feta cheese
  • 2 tablespoons fresh mint
  • 2 tablespoons fresh Italian parsley
  • ⅓ cup shelled pistachios
  • 2 limes, for juice
  • 1 small red onion
  • 2 stalks celery
  • 1 small serrano pepper
  • 1 teaspoon kosher salt, divided
  • 4 cups fresh watermelon chunks
  • 3 tablespoons olive oil

Steps

    1. Cut feta into bite-size cubes. Chop mint, parsley, and pistachios finely. Juice limes (2 tablespoons). Slice onion (1 cup), celery (½ cup), and pepper thinly, discarding membranes and seeds if desired.
    2. Place onions and peppers in small bowl; top with lime juice and ½ teaspoon salt. Let stand 10 minutes to marinate.
    3. Combine watermelon, mint, parsley, celery, pistachios, oil, and remaining ½ teaspoon salt; toss to coat.
    4. Stir in onion mixture and feta; toss to coat. Serve.
