Ingredients
- 4 oz feta cheese
- 2 tablespoons fresh mint
- 2 tablespoons fresh Italian parsley
- ⅓ cup shelled pistachios
- 2 limes, for juice
- 1 small red onion
- 2 stalks celery
- 1 small serrano pepper
- 1 teaspoon kosher salt, divided
- 4 cups watermelon chunks
- 3 tablespoons olive oil
Steps
- Cut feta into bite-size cubes. Chop mint, parsley, and pistachios. Juice limes (2 tablespoons). Slice onion (1 cup), celery (½ cup), and pepper (remove membranes and seeds, if desired) thinly.
- Place onions and peppers in small bowl; top with lime juice and ½ teaspoon salt. Let stand 10 minutes to marinate.
- Combine watermelon, mint, parsley, celery, pistachios, oil, and remaining ½ teaspoon salt; toss to coat.
- Stir in red onion mixture and feta; toss to coat. Serve.
