Village-Style Chopped Salad

Ingredients
  • 1 seedless cucumber
  • 1 small red onion
  • 1 medium red bell pepper
  • 10 oz grape tomatoes
  • ½ cup pitted Kalamata olives
  • ½ bunch fresh Italian parsley
  • ½ oz fresh mint
  • ½ oz fresh dill
  • 1 lemon, for juice
  • 1 oz feta cheese
  • 1 teaspoon dried oregano
  • 1 tablespoon za'atar seasoning
  • 2 tablespoons apple cider vinegar
  • ¼ teaspoon kosher salt
Steps
  1. Cut cucumber (2 cups), onion (1 cup), and bell pepper (1 cup) into ¼-inch cubes. Quarter tomatoes and olives. Chop parsley (½ cup), mint (¼ cup), and dill (¼ cup) finely. Juice lemon (2 tablespoons). Crumble feta.
  2. Place all ingredients in large bowl; toss to coat. Chill 30 minutes (or overnight) until ready to serve.
Chef's Tip: Add your favorite cooked lean meat or drained and rinsed beans for a complete meal.
