Very Berry Gummies

Ingredients

  • ⅔ cup chicken bone broth
  • 1 oz unflavored gelatin
  • 3 lemons, for juice
  • 1 cup frozen triple berry blend (or favorite frozen fruit)
  • 2 tablespoons honey
  • 1 tablespoon unflavored collagen powder

Steps

    1. Place broth in small saucepan and sprinkle gelatin over top; let stand 5 minutes to bloom. Juice lemons (about ⅓ cup). Place berry blend and lemon juice in blender (or food processor bowl); blend until smooth. Strain, if desired.
    2. Whisk gelatin mixture. Heat pan on low; simmer 4–5 minutes, whisking occasionally, until gelatin has completely dissolved. Stir berry mixture, honey, and collagen powder into pan; simmer 2 more minutes, stirring occasionally.
    3. Remove pan from heat and let cool slightly. Place small silicone molds (or ice cube trays) on baking sheet. Pour berry mixture into measuring cup (for easy pouring); divide mixture evenly among molds (about 2 tablespoons each). Chill 25–30 minutes until firm and set. Invert molds or run a knife around edges to remove. Serve.
