Veggie Burger Bowl

Ingredients

  • 1 small red onion
  • ¼ cup red wine vinegar
  • ½ teaspoon kosher salt
  • 4 frozen soy-based burger patties
  • ¼ cup avocado oil mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon water
  • 1 cup grape tomatoes
  • 1 (8 oz) bag shredded lettuce
  • 1 cup non-dairy shredded cheddar cheese
  • ¼ cup deli-style dill pickle relish

Steps

    1. Preheat oven to 375°F. Halve onion, then slice (about 1 cup). Whisk vinegar and salt until dissolved. Add onions and toss to coat. Let stand 15 minutes, stirring occasionally.
    2. Bake patties following package instructions.
    3. Whisk mayonnaise, ketchup, and water until blended. Cut patties into quarters. Halve tomatoes.
    4. Divide lettuce evenly among serving bowls. Top with cheese, pickles, onions, tomatoes, and patties in individual piles. Drizzle with mayonnaise mixture. Serve.
