Bacon Avocado Toast

Ingredients

  • 4 slices cowboy (or turkey) bacon
  • 1 medium vine-ripened tomato
  • 1 ripe Hass avocado
  • 2 slices Bakery avocado (or everything) bread
  • ½ teaspoon everything seasoning, divided

Steps

    1. Cook bacon following package instructions (wash hands).
    2. Cut tomato into ¼-inch-thick slices, then cut each slice in half. Halve avocado and remove pit. Scoop out flesh from one-half avocado into small mixing bowl; mash until slightly chunky and easy to spread. Scoop out flesh from remaining half avocado and slice.
    3. Toast bread. Spread each bread slice with mashed avocado, then top with tomatoes and sliced avocados. Sprinkle each slice with ¼ teaspoon seasoning and top with bacon. Serve.

    Chefs Tip: Spread mayonnaise on 2 toasted bread slices, then top with bacon, lettuce, tomato, and avocado to make a California-style BLT.
