Tortilla Egg Bake

Ingredients
- 8 grape tomatoes
- 1 oz thin-sliced ham (or turkey)
- ½ cup frozen broccoli florets
- Cooking spray
- 1 (10-inch) low-carb tortilla
- ½ cup fresh baby spinach
- 4 large eggs
- ½ teaspoon Greek seasoning
- ¼ cup whole-milk cottage cheese
- ¼ cup crumbled feta (or shredded mozzarella) cheese
Steps
- Preheat oven to 350°F. Halve tomatoes. Chop ham (about ¼ cup). Place broccoli in microwave-safe dish and cover. Microwave on HIGH 1 minute or until thawed; drain and chop coarsely. Coat 9-inch pie pan with spray, press tortilla into pan, and top with spinach.
- Combine eggs, seasoning, cottage cheese, and feta cheese; whisk until well blended. Pour mixture over spinach, covering evenly. Top with broccoli, tomatoes, and ham. Bake 18–20 minutes until center is set and 160°F. Let stand 10 minutes; slice and serve.
Chef’s Tip: You can customize your egg bake with your favorite greens, frozen vegetables, and shredded or crumbled cheese.
