Ingredients

  • 4 oz feta cheese
  • 12 oz Sugar Bomb Tomatoes
  • ½ seedless cucumber
  • 1 cup tri-pepper blend (diced fresh green, red, and yellow bell peppers)
  • ½ cup Greek vinaigrette

Steps

    1. Crumble cheese. Halve tomatoes, if desired. Halve cucumber lengthwise, then slice thinly (1 cup).
    2. Combine all ingredients (except vinaigrette) in serving bowl. Pour in vinaigrette; toss to coat. Chill until ready to serve.
Other Preparation Methods
    • Quick kimchi: Halve 12 oz Sugar Bomb Tomatoes and place in colander; sprinkle with 1 teaspoon kosher salt and let stand 30 minutes. Combine in small bowl: 2 tablespoons white vinegar, 1 teaspoon garlic stir-in paste, 1 tablespoon gochujang, 2 teaspoons fish sauce, 1 teaspoon sugar, and 2 tablespoons sliced green onions. Add tomatoes; toss to coat. Chill until ready to serve.
