Thick and Spicy Barbecue Sauce

Ingredients
  • 1 small onion
  • 2 cloves garlic
  • 2 lemons
  • 1 tablespoon unsalted butter
  • 1 cup ketchup
  • ¼ cup packed light brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons tomato paste
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons chili powder
  • 1 teaspoon ground red pepper (optional)
Steps
  1. Coarsely chop onion; mince garlic. Juice lemons (¼ cup). Preheat large saucepan on medium 2–3 minutes. Add butter and melt; add onion and cook 2–3 minutes, stirring occasionally, until tender. Add garlic; cook 1 more minute.
  2. Reduce heat to low; stir in lemon juice and remaining ingredients. Bring to a simmer and cook 15–20 minutes, stirring occasionally, until sauce has slightly thickened. Remove pan from heat and set aside to cool. Place in an airtight container and refrigerate up to 2 weeks. (Makes about 1 ½ cups.)
