Ingredients

  • 1 cup GreenWise tri-color quinoa
  • 2 cups GreenWise vegetable broth
  • 1 (10-oz) bag GreenWise frozen broccoli florets
  • 1 ½ cups GreenWise low-sodium garbanzo beans, drained and rinsed
  • 1 seedless cucumber, quartered and thinly sliced
  • 1 (5-oz) container GreenWise mixed greens
  • ¾ cup GreenWise matchstick carrots
  • 3 tablespoons GreenWise dried cranberries
  • 6 oz GreenWise ginger salad dressing
  • 3 tablespoons GreenWise sunflower seeds

Steps

    1. Prepare quinoa following package instructions using broth in place of water. Cook broccoli following microwave package instructions. Chill quinoa and broccoli until cool.
    2. Drain and rinse beans. Quarter cucumber, then slice thinly (¾ cup).
    3. Assemble bowl by placing even amounts greens and quinoa into serving bowls; top with piles of broccoli, beans, cucumber, carrots, and cranberries. Drizzle with dressing, then sprinkle with sunflower seeds; serve.
