Teriyaki-Glazed Fish and Stir-Fry Vegetables

Ingredients

  • Nonstick aluminum foil
  • ⅓ cup mayonnaise
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon ginger stir-in paste
  • 1 tablespoon cilantro stir-in paste
  • 1 tablespoon minced garlic
  • 4 (6 oz) flaky white fish fillets (such as tilapia, haddock, or flounder; about 1 ½ lb)
  • 2 tablespoons sesame oil
  • 1 bag fresh stir-fry vegetables (12–16 oz)

Steps

    1. Place oven rack 8 inches from heating element; preheat broiler on HIGH. Line baking sheet with foil. Combine mayonnaise, teriyaki sauce, ginger paste, cilantro paste, and garlic in medium bowl; whisk until well blended. Reserve 2 tablespoons teriyaki mixture.
    2. Dip both sides of fish into remaining teriyaki mixture until coated; arrange fish on prepared baking sheet (wash hands). Broil 5–7 minutes until centers of fillets flake easily and are 145°F.
    3. Meanwhile, preheat large sauté pan on medium-high 2–3 minutes. Place oil in pan, then add stir-fry vegetables; cook and stir 4–5 minutes until tender. Remove from heat and stir in reserved teriyaki mixture. Serve fish over vegetables.
