Sweet Potato Kale Salad

Ingredients

  • 2 medium sweet potatoes
  • 1 tablespoon canola oil
  • ½ teaspoon kosher salt
  • 1 (12 oz) chopped sweet kale salad kit
  • ½ cup crumbled feta cheese

Steps

    1. Preheat oven to 350°F. Peel potatoes and cut into ½-inch cubes. Coat potatoes with oil and salt, then spread in single layer on baking sheet; bake 12–15 minutes until tender when pierced with fork. Let stand 3 minutes to cool.
    2. Place all salad kit ingredients in salad bowl. Add potatoes and cheese; toss and serve.
