- 2 ½ cups all-purpose baking mix
- 2 tablespoons sugar
- ¾ cup prepared mashed sweet potatoes
- 5 tablespoons buttermilk
- Cooking spray
Steps
- Preheat oven to 450°F. Combine baking mix and sugar in large bowl. Whisk sweet potatoes and buttermilk in second bowl. Fold sweet potato mixture into baking mix; knead gently, with lightly floured hands, until dough forms.
- Place dough on flat surface; press into a ¾-inch-thick rectangle and cut biscuits with a 2 ½-inch round biscuit cutter. Coat baking sheet with spray, then place biscuits on prepared sheet ¼-inch apart. Repeat until all dough has been formed into biscuits.
- Bake 10–12 minutes or until golden and fluffy. Transfer to cooling rack to cool before serving.
