Summer Avocado Salad

Ingredients
- 1 ripe peach (or nectarine)
- 1 ripe mango
- 3 limes, for juice
- 1 ripe Florida avocado
- 2 teaspoons garlic stir-in paste
- ¼ teaspoon sea (or kosher) salt
- ¼ cup extra-virgin olive oil<
- ½ cup diced fresh red onions
- 1 cup baby arugula
- 1 teaspoon sriracha sauce (optional)
Steps
- Peel peach and cut into bite-size cubes. Cut mango sides away from pit, then score flesh into bite-size cubes and scoop from skin. Juice limes (3 tablespoons). Cut avocado into fourths lengthwise.
- Combine lime juice, garlic paste, salt, and oil; whisk until blended. Combine peaches, mangos, onions, and arugula in large bowl; toss with lime dressing. Top each avocado section with salad mixture; drizzle with sriracha, if using. Serve.
