Strawberry Matcha Breeze

Ingredients

  • 8 oz fresh strawberries
  • 1 ¼ cups water, divided
  • 4 tablespoons sugar substitute, divided
  • 2 tablespoons matcha (green tea) powder
  • 4 cups crushed ice
  • 4 cups unsweetened vanilla almond milk

Steps

    1. Slice strawberries (about 3 cups); place in medium bowl with ¼ cup water and 2 tablespoons sugar substitute. Mash into fine pieces with potato masher (or process in food processer). Let stand to macerate 30 minutes.
    2. Heat remaining 1 cup water to a boil, then remove from heat. Place matcha powder, remaining 2 tablespoons sugar substitute, and ¼ cup boiling water in medium bowl; whisk into smooth paste, then add remaining ¾ cup boiling water slowly, whisking continuously until tea is foamy and doubled in volume.
    3. Divide strawberry mixture evenly among 4 (16 oz) tall glasses; add 1 cup ice to each, then pour 1 cup milk slowly over ice and top carefully with matcha mixture to create layers. Serve with straws.
