Strawberry Cheesecake Crêpes

Ingredients

  • 8 oz cream cheese
  • 16 oz fresh strawberries
  • 5 tablespoons + ½ cup powdered sugar, divided
  • 1 ¼ cups heavy whipping cream, divided
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 8 (9-inch) ready-to-use French crêpes

Steps

    1. Set cream cheese out to soften. Hull strawberries, then chop into small pieces and place in medium bowl. Stir in 3 tablespoons powdered sugar until well blended; let stand 30 minutes, stirring occasionally, until strawberries begin to release their juices.
    2. Place in bowl of food processor: cream cheese, ¼ cup heavy cream, ½ cup powdered sugar, vanilla, and salt. Process until blended and smooth.
    3. Place remaining 1 cup heavy cream and 2 tablespoons powdered sugar in medium bowl; beat with electric mixer on HIGH until stiff peaks form.
    4. Heat crêpes following package instructions, then arrange on work surface in single layer. Spread cream cheese mixture evenly over crêpes; fold in half, then in half again to create triangles. Top evenly with strawberry mixture and whipped cream. Serve.
