Ingredients
- 8 oz cream cheese
- 16 oz fresh strawberries
- 5 tablespoons + ½ cup powdered sugar, divided
- 1 ¼ cups heavy whipping cream, divided
- 1 teaspoon vanilla extract
- ¼ teaspoon kosher salt
- 8 (9-inch) ready-to-use French crêpes
Steps
- Set cream cheese out to soften. Hull strawberries, then chop into small pieces and place in medium bowl. Stir in 3 tablespoons powdered sugar until well blended; let stand 30 minutes, stirring occasionally, until strawberries begin to release their juices.
- Place in bowl of food processor: cream cheese, ¼ cup heavy cream, ½ cup powdered sugar, vanilla, and salt. Process until blended and smooth.
- Place remaining 1 cup heavy cream and 2 tablespoons powdered sugar in medium bowl; beat with electric mixer on HIGH until stiff peaks form.
- Heat crêpes following package instructions, then arrange on work surface in single layer. Spread cream cheese mixture evenly over crêpes; fold in half, then in half again to create triangles. Top evenly with strawberry mixture and whipped cream. Serve.
