Spicy Shrimp Tacos with Avocado Salad

Ingredients

  • 3 limes, for juice
  • 4 oz queso fresco cheese, crumbled
  • ½ cup fresh cilantro leaves, coarsely chopped
  • 1 medium red bell pepper, thinly sliced
  • 1 medium yellow bell pepper, thinly sliced
  • 1 medium orange bell pepper, thinly sliced
  • 1 lb peeled/deveined shrimp, tails removed
  • 8 (12-inch) wooden skewers
  • 1 teaspoon kosher salt, divided
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • 2 ripe avocados
  • 1 cup prediced tomatoes
  • ½ cup prediced yellow onions
  • 8 small corn tortillas

Prep

    • Squeeze limes for juice (3 tablespoons). Crumble cheese and chop cilantro (½ cup each).
    • Slice peppers into strips (1 cup each) and combine.

Steps

    1. Place 4 shrimp on work surface; lay hand flat on shrimp and push pointed end of skewer through tail, then head, so shrimp will lie flat (repeat with remaining shrimp and skewers). Place skewers in single layer in shallow pan (wash hands). Combine ¾ teaspoon salt, cumin, chili powder, 2 tablespoons lime juice, and oil; whisk thoroughly. Pour marinade over shrimp, turning to coat both sides; let stand 30 minutes to marinate.
    2. Preheat grill (or grill pan). Peel avocado and remove seed, then cut into small cubes. Combine avocado with tomatoes, onions, remaining 1 tablespoon lime juice, and remaining ¼ teaspoon salt.
    3. Place shrimp on grill; grill 2–3 minutes, on each side, and just until shrimp turn pink and opaque. Warm tortillas following package instructions. Remove shrimp from skewers.
    4. Assemble tacos by placing 4–5 shrimp in each tortilla, then top with ¼ cup bell pepper mixture, 2 tablespoons avocado mixture, and even amounts queso fresco, and cilantro. Serve with hot sauce and lime wedge, if desired.
