Spicy Chicken Meatballs

Ingredients

  • Nonstick aluminum foil
  • 2 lb ground chicken
  • 1 cup plain panko breadcrumbs
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon pepper
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 2 tablespoons chunky garlic stir-in paste
  • 2 large eggs (or ½ cup egg substitute)
  • 2 cups brown sugar
  • 1 cup Buffalo wing sauce
  • ¼ cup apple cider vinegar
  • 1 teaspoon crushed red pepper
  • 1 cup sliced fresh green onions

Steps

    1. Preheat oven to 450°F. Line 2 baking sheets with foil. Combine chicken, breadcrumbs, salt, pepper, onion powder, paprika, garlic paste, and eggs. Form into 48 golf ball–size meatballs; arrange 1 inch apart on baking sheets (wash hands). Bake 10 minutes.
    2. Combine brown sugar, wing sauce, vinegar, and red pepper in small saucepan on medium; cook 10–12 minutes until sauce is reduced by about one-half (sauce will thicken as it sits).
    3. Brush meatballs with sauce; bake 2–3 more minutes until meatballs are 165°F. Toss meatballs with remaining sauce; sprinkle with onions. Serve.
