Spicy Chicken Meatballs

Ingredients
  • Nonstick aluminum foil
  • 2 lb ground chicken
  • 1 cup plain panko bread crumbs
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon pepper
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 2 tablespoons chunky garlic paste
  • 2 large eggs (or ½ cup egg substitute)
  • 2 cups brown sugar
  • 1 cup buffalo wing sauce
  • ¼ cup apple cider vinegar
  • 1 teaspoon crushed red pepper
  • 3 oz presliced green onions (1 cup)
Steps
  1. Preheat oven to 450°F. Line two baking sheets with foil. Combine ground chicken, bread crumbs, salt, pepper, onion powder, paprika, garlic, and eggs. Form into small golf ball-size meatballs; place 1 inch apart on baking sheets (about 48 meatballs). Bake 10 minutes.
  2. Combine brown sugar, wing sauce, vinegar, and red pepper in small saucepan on medium; cook 10–12 minutes or until sauce is reduced by about one-half (sauce will thicken as it sits).
  3. Brush meatballs with sauce; bake 2–3 more minutes or until meatballs are 165°F. Toss meatballs with remaining sauce; sprinkle with onions. Serve.
