Ingredients
- 2 tablespoons taco seasoning
- 1 teaspoon smoked paprika
- 1 lb pork tenderloin
- 2 tablespoons olive oil, divided
- 2 medium, tart apples
- 1 navel orange, for zest, segments, and juice
- 1 small, fresh jalapeño pepper
- 2 tablespoons fresh cilantro
- ¼ cup sliced fresh green onions
- 2 tablespoons apple cider vinegar
- ¼ teaspoon kosher salt
- ¼ teaspoon pepper
- 1 (8.8 oz) pouch cooked brown rice
Steps
- Combine taco seasoning and paprika. Place pork in shallow dish; coat with 1 tablespoon oil, then seasoning mixture (wash hands). Cover and let stand 30 minutes to marinate.
- Preheat grill (or grill pan) on medium. Spiralize apples (2 cups), discarding seeds. Zest orange (1 teaspoon). Halve orange and remove segments, then squeeze remaining membranes for juice (2 teaspoons). Slice jalapeño thinly, removing membranes and seeds if desired. Chop cilantro finely.
- Place apple spirals, orange zest, juice, and segments, jalapeños, cilantro, onions, vinegar, salt, pepper, and remaining 1 tablespoon oil in medium bowl. Stir gently (fold) until blended.
- Place pork on grill; cook 10–12 minutes, turning often, until grill-marked and 145°F. Let stand 5 minutes to rest before slicing.
- Heat rice following package microwave instructions. Serve pork over rice with slaw.
