Spiced Fried Okra

Ingredients

  • 1 lb fresh okra
  • ½ cup all-purpose flour
  • ½ cup yellow cornmeal
  • ½ teaspoon garam masala
  • ½ teaspoon kosher salt
  • ¼ teaspoon red pepper
  • 1 large egg (or ¼ cup egg substitute)
  • ¼ cup whole milk
  • ½ cup vegetable oil

Steps

    1. Cut okra into bite-size pieces (or leave whole); set aside. Combine flour, cornmeal, garam masala, salt, and red pepper until blended; place in shallow dish.
    2. Whisk egg and milk in second shallow dish until blended. Dip okra into milk mixture, allowing excess to drip off, then dip into cornmeal mixture, using fingertips to evenly coat.
    3. Place oil in large sauté pan on medium-high 4–5 minutes. Gently place okra in oil in small batches; fry 3–4 minutes, turning occasionally, or until tender and golden. Remove from oil with slotted spoon; drain on paper towels. Serve.
