Ingredients
- 3 limes, for zest/juice
- ¼ cup water
- 2 tablespoons granulated sugar substitute
- 2 sprigs fresh mint, divided
- 1 ½ cups crushed ice
- 4 oz chilled pomegranate juice
- 6 oz chilled citrus sparkling water
- 1 tablespoon pomegranate arils (for garnish)
Steps
- Zest 1 lime (1 teaspoon), then juice all 3 limes (3 tablespoons). Cut 4 very thin slices of lime for garnish. Place zest, juice, water, sugar substitute, and 4 mint leaves in microwave-safe cup or bowl. Microwave 1 minute or until sugar substitute dissolves; strain if desired. Let stand to cool.
- Fill 2 cocktail glasses with ice. Top each with 2 oz pomegranate juice, 1 oz lime-mint syrup, and 3 oz sparkling water. Garnish with lime slices, pomegranate arils, and remaining mint sprigs. Serve.
