    Ingredients

    • 1 ½ lb Campari (or cherry) tomatoes
    • 0.5 oz fresh basil
    • 1 cup mayonnaise
    • ¼ teaspoon kosher salt
    • ¼ teaspoon pepper
    • 2 tablespoons garlic stir-in paste
    • 4 oz saltine crackers (1 sleeve)

    Steps

      1. Quarter tomatoes; remove seeds and pulp. Chop basil finely (½ cup).
      2. Combine mayonnaise, salt, pepper, garlic paste, and basil in large bowl; whisk to blend. Fold in tomatoes. Crush crackers lightly and fold into tomato mixture. Serve.
      Chef's Tip: Crackers soften after about 1 hour; as the salad sits, they thicken to a mashed potato consistency.
