Sourdough Egg Sandwiches

Ingredients

  • 3 eggs, or ¾ cup egg substitute

  • 1⁄4 teaspoon salt

  • ⅛ teaspoon ground black pepper
  • 1 teaspoon butter
  • 1⁄4 cup green bell pepper, chopped
  • 1⁄4 cup shredded sharp cheddar cheese (1 ounce)
  • 4 slices sourdough bread, toasted
  • 
4 thin slices prosciutto or cooked ham
  • 2 tablespoons basil pesto

Steps

    1. In a large mixing bowl whisk together eggs, salt, and black pepper.


    2. Preheat large nonstick sauté pan on medium heat 2–3 minutes; place butter in pan and swirl to melt. Pour egg mixture into pan. Cook 1–2 minutes, or until eggs begin to set but are still moist; do not stir. Sprinkle with green pepper and cheese. Fold up two longest sides into the center (so it resembles an omelet). Cook 1 minute more. Remove from heat.
    3. Cut cooked egg in half crosswise. Place one half atop two of the slices of bread. Top each with two slices of the prosciutto. Spread pesto on one side of the remaining 2 slices of bread. Place atop sandwiches, pesto sides down; serve.
