Ingredients

  • 1 red bell pepper
  • 6 green onions
  • ¼ cup cilantro
  • ¼ cup basil leaves
  • 2 cups snap peas
  • 10 oz soba buckwheat noodles
  • ¼ cup rice vinegar
  • ¼ cup soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger spice paste
  • 1 teaspoon honey
  • ¼ teaspoon crushed red pepper (optional)
  • 2 tablespoons sesame seeds

Steps

    1. Bring water to boil for pasta. Slice bell pepper into 1-inch strips; chop green onions into ¼-inch pieces. Chop cilantro and basil.
    2. Add bell peppers and snap peas to boiling water; boil 1 ½ minutes then remove from water and transfer to ice water. Cook pasta per package instructions. Drain pasta and rinse with cold running water. Drain pasta well and transfer to paper towel-lined baking sheet; arrange in single layer and cover with paper towel to dry slightly.
    3. Combine in large bowl: vinegar, soy sauce, oil, ginger, honey, and crushed red pepper (if desired) until well blended. Add noodles, green onions, snap peas, and bell pepper; toss to coat. Serve pasta garnished with sesame seeds, basil, and cilantro.
