So-Good Sorbet Floats

Ingredients

  • 2 (1-qt) containers lime or lemon sorbet, softened
  • 2 teaspoons fresh mint, finely chopped
  • 1 (750-ml) bottle semidry or extra-dry cava (or sparkling wine), chilled
  • 1 lime, zested (optional)

Steps

    1. Place sorbet out 10 minutes to soften; Chop mint. Stir mint into sorbet until blended. Cover and freeze the sorbet-mint mixture about 15 minutes or until almost firm.
    2. Scoop ⅓ to ½ cup of the sorbet-mint mixture into 4 serving glass. Top with ½ to ¾ cup Cava. Garnish each with lime zest. Serve with spoons.
