Mini Waffle BLTs
Ingredients
- 6 slices fully cooked bacon
- 24 frozen mini waffles
- 6 leaves Bibb lettuce
- ½ cup reduced-fat mayonnaise
- 2 teaspoons prepared horseradish
- 2 plum tomatoes
Steps
- Heat bacon and toast waffles following package instructions.
- Meanwhile, tear lettuce into 2-inch pieces. Cut bacon slices into 4 pieces each. Cut tomatoes into 6 slices each. Combine mayonnaise and horseradish.
- Spread 1 teaspoon mayonnaise mixture on 1 side of each waffle. Arrange 12 waffles mayonnaise-side up on work surface; top with lettuce, 2 pieces bacon, and 1 slice tomato. Complete sandwiches by topping with remaining 12 waffles. Serve.
Hummus Roll-Ups
Ingredients
- 1 seedless cucumber
- 1 small Granny Smith apple
- 8 (6-inch) flour tortillas
- ½ cup sriracha carrot (or other flavor) hummus
Steps
- Cut cucumber in half lengthwise; slice thinly (1 ½ cups). Core and quarter apple; cut each quarter into 4 slices.
- Microwave tortillas on HIGH 12–15 seconds to soften. Spread 1 tablespoon hummus on each tortilla. Arrange cucumbers and apples down centers of tortillas; fold in ends and roll around filling.
- Place in airtight container and chill 30 minutes (or overnight). Cut each roll-up in half and serve.
Curry Popcorn
Ingredients
- 1 tablespoon curry powder
- 1 teaspoon ground ginger
- 2 tablespoons coconut (or canola) oil
- 12 cups Deli popcorn (about 3 oz)
- 1 cup flaked sweetened coconut
Steps
- Combine curry powder, ginger, and oil in small microwave-safe bowl. Microwave on HIGH up to 1 minute or until oil is melted; stir to combine.
- Drizzle mixture over popcorn; toss to coat. Stir in coconut. Serve.
Serving Suggestions
- These snacks work well together or individually. Serve with your favorite chips and dips, coconut water, and fruit parfaits.
