Smoked Turkey and Avocado Toast

Ingredients

  • 1 avocado
  • 1 lemon, for juice
  • 1 teaspoon kosher salt, divided
  • ½ teaspoon pepper
  • 1 medium tomato
  • 2 slices whole-grain bread
  • 4 oz sliced smoked turkey breast

Steps

    1. Cut avocado in half; remove pit. Scoop flesh out of skin and place in small bowl.
    2. Squeeze lemon for juice (1 teaspoon). Add lemon juice, ½ teaspoon salt, and pepper to bowl with avocado; smash lightly leaving some chunks of avocado. Slice tomato.
    3. Toast bread, then top each slice with even amounts avocado mixture, tomato, sliced turkey, and remaining ½ teaspoon salt. Serve.
