Ranch Macaroni and Cheese Cups
Ingredients
- Cooking spray
- 8 tablespoons seasoned bread crumbs, divided
- 4 oz diced ham
- 1 (20 oz) package prepared macaroni and cheese
- 1 teaspoon ranch seasoning mix (or taco seasoning)
- 1 cup shredded sharp cheddar cheese, divided
Steps
- Preheat oven to 400°F. Coat 24-cup mini-muffin pan with spray and 3 tablespoons bread crumbs (discard any excess from pan). Chop ham.
- Combine macaroni, ham seasoning, ½ cup cheese, and remaining 5 tablespoons bread crumbs; press 1 heaping tablespoon mixture into each muffin cup. Bake 10 minutes.
- Sprinkle tops of cups with remaining ½ cup cheese. Bake 3–4 more minutes until cheese has melted and tops are golden. Let stand 10 minutes to cool. Serve.
Pressed Mini Cubans
Ingredients
- 5 oz sliced cooked ham
- 3 oz sliced Swiss cheese
- ¼ cup reduced-fat mayonnaise
- 2 teaspoons yellow mustard
- 16 dill pickle chips
- 8 soft tortilla bowls (or small tortillas)
- Butter-flavor cooking spray
- 1 tablespoon honey, divided (optional)
Steps
- Cut ham and cheese slices in half. Combine mayonnaise and mustard. Divide ham, cheese, pickles, and mayonnaise mixture evenly among tortillas.
- Preheat large, nonstick sauté pan (or sandwich press) on medium 1–2 minutes. Fold each sandwich together and press; coat with spray. Cook sandwiches (in batches) 2–3 minutes on each side (3–4 minutes for sandwich press) until cheese has melted; repeat with remaining sandwiches. Drizzle with honey, if using; serve.
Strawberry Cookie Bites
Ingredients
- Nonstick aluminum foil
- 6 medium strawberries
- ½ cup strawberry cream cheese
- 48 vanilla wafer cookies
- ½ cup white (or milk chocolate) morsels
- 1 tablespoon coconut oil
- 2 tablespoons rainbow sprinkles (optional)
Steps
- Line baking sheet with foil. Hull strawberries, then cut into 4 slices each. Spread ½ teaspoon cream cheese on flat side of each cookie. Place 1 strawberry slice on 24 cookies; press together with remaining 24 cookies to form sandwiches.
- Place morsels and coconut oil in microwave-safe bowl; microwave on HIGH 1–2 minutes, stirring every 30 seconds, until melted and smooth. Dip one-half of each cookie sandwich in coating. Arrange on baking sheet and top with sprinkles; chill 5 minutes to set. Serve.
Serving Suggestions
- Complete your meal with steamed vegetables, fruit salad, and yogurt parfaits.
- The macaroni and cheese cups can be made in a 12-cup regular muffin pan, and baked for 10–15 minutes more, or until hot and golden brown.
