    Sloppy Joe Rotini

    Ingredients

    • 1 pound lean ground beef, 7% fat (or ground turkey)
    • 2 teaspoons minced garlic
    • ½ teaspoon salt
    • ⅛ teaspoon pepper
    • 1 cup water
    • 2 teaspoons beef base
    • 1 (15.5-ounce) can Sloppy Joe sauce
    • 1 cup whole kernel corn (drained)
    • 2 cups tri-color rotini

    Steps

    1. Preheat large saucepan on medium-high 2-3 minutes. Combine ground beef, garlic, salt, and pepper in saucepan. Brown 5-7 minutes until meat is brown and no pink remains. Stir frequently and break up meat as it cooks.
    2. Stir in remaining ingredients. Cover and bring to boil.
    3. Reduce to medium and simmer 8-10 minutes, stirring occasionally, or until pasta is tender. Serve.

    Pinball Salad

    Ingredients

    • 8 ounces classic salad blend (iceberg lettuce, carrots, red cabbage)
    • 1 cup green seedless grapes (rinsed)
    • 1 cup grape tomatoes (rinsed)
    • 2 tablespoons shelled sunflower seeds
    • ½ cup shredded Colby/Monterey Jack cheese
    • ¼ cup refrigerated poppy seed dressing

    Steps

    1. Place salad blend in salad bowl.
    2. Remove grapes from stems. Add with remaining ingredients to salad blend; toss to coat and serve.

    Serving Suggestions

  • The poppy seeds in the dressing add a nutty flavor to the sweetness of the dressing. Tell your kids what kind of dressing it is after they have tried it.
