Ingredients
- Cooking spray
- 2 cups all-purpose baking mix
- 1 cup creamy (or crunchy) peanut butter
- 1 ½ cups dark (or bittersweet) chocolate morsels, divided
- 1 large egg
- ¾ cup sugar
- 1 cup applesauce
- ½ cup whole milk
- 1 teaspoon vanilla extract
Steps
- Preheat oven to 325°F. Coat 10- x 5- x 2-inch loaf pan with spray.
- Place baking mix and peanut butter in large bowl. Work mixture with fingertips until fully combined, then stir in 1 cup morsels. Place egg and sugar in second bowl; beat with electric mixer until pale yellow and fluffy. Add applesauce, milk, and vanilla to egg mixture; beat until blended.
- Add egg mixture to peanut butter mixture and stir until batter forms. Spread batter evenly in pan, then sprinkle with remaining ½ cup morsels.
- Bake 60–70 minutes until top is golden and toothpick inserted in center comes out clean. Let stand to cool in pan 30 minutes before removing; cool completely before serving.
