Shrimp with Garlic-Ginger Sauce

Ingredients

  • 1 lb easy-peel shrimp, tails on
  • 2-inch piece fresh ginger
  • 6 cloves garlic
  • 2 tablespoons fresh cilantro
  • ¼ cup soy sauce
  • 1 tablespoon mirin (or rice vinegar)
  • 2 teaspoons granulated sugar
  • 1 teaspoon pepper
  • 2 tablespoons water
  • 1 tablespoon vegetable oil

Steps

    1. Remove shrimp shells if desired. Peel ginger; chop ginger (2 tablespoons) and garlic (1 tablespoon) finely. Chop cilantro finely. Combine soy sauce, mirin, sugar, pepper, and water until blended.
    2. Heat oil in large sauté pan on medium-high 2–3 minutes. Add ginger and garlic; cook and stir 30 seconds. Stir in shrimp; cook and stir 2 minutes, then pour in soy sauce mixture. Reduce heat to medium and cook 2–3 minutes, stirring occasionally, until sauce reduces slightly and shrimp are pink and opaque. Arrange shrimp on serving platter and top with cilantro. Serve.
