Seafood Boil

Ingredients
- 1 lb fresh littleneck clams
- 1 lb fresh mussels
- 3 lemons
- 1 large yellow onion
- 4 quarts water
- 8 cloves garlic
- ½ cup seafood seasoning
- 1 ½ lb baby red (or gold) potatoes
- 4 medium fresh lobster tails
- 2 tablespoons Italian parsley
- 1 lb steamed snow crab legs (or Dungeness clusters)
- 8 frozen mini corn on the cob
Steps
- Rinse clams and mussels under cold running water; drain well and set aside. Cut lemons into quarters; chop onion into large chunks.
- Combine in large stockpot: water, onions, lemons, garlic, and seasoning until blended. Bring to a boil on high. Cut potatoes in half and add to stockpot; reduce heat to medium and simmer 8 minutes.
- Add lobster tails to pot; cover pot with lid and simmer 5 minutes. Finely chop parsley.
- Add to pot: clams, mussels, crab legs, and corn; cover pot with lid and cook 5 more minutes until clams, and mussels open (discard unopened shells) and lobster is opaque.
- Strain seafood boil into bowl or platter. Top with parsley and additional seasoning (if desired). Serve.
