Avocado Pistachio Salad
Ingredients
- 1 Hass avocado
- ⅓ cup roasted pistachios, finely chopped
- ½ cup crumbled feta cheese
- 1 bag baby spinach (5–6 oz)
- ¼ cup lemon vinaigrette
Steps
- Peel avocado and remove seed, then cut flesh into small cubes. Chop pistachios and place in salad bowl with remaining ingredients. Toss salad to coat; serve.
Sausage with Pineapple Kimchi Slaw
Ingredients
- 1 cup mild kimchi, drained and coarsely chopped
- ½ cup pineapple tidbits, drained
- ¼ cup presliced green onions
- 4 links smoked sausage
- 4 hot dog buns
- 4 tablespoons spicy mayonnaise
Steps
- Preheat grill on medium. Drain kimchi and chop. Drain pineapple. Combine kimchi, pineapple, and onions; place in microwave-safe bowl.
- Grill sausage 10–12 minutes, turning occasionally, or until charred and 165°F. Microwave slaw on HIGH for 1–2 minutes or until steaming.
- Place sausages in buns; top with 1 tablespoon each mayonnaise and slaw. Serve.
Serving Suggestions
- Complete your meal with sesame sticks, steamed vegetables, lemonade, and key lime pie for dessert.
- Kimchi is a pickled cabbage mixture coated with a Korean spicy paste. It's similar to sauerkraut, but with a spicy kick.
