Ingredients

- 16 oz mild pork sausage
- 12 large eggs
- ½ cup heavy whipping cream
- ½ cup sliced fresh green onions
- ½ teaspoon kosher salt
- ½ teaspoon pepper
- 1 (20 oz) package refrigerated hash browns
- 1 cup shredded Monterey (or Colby) Jack cheese, divided
- 1 cup shredded cheddar cheese, divided
- Ketchup (optional for serving)
Steps
- Preheat oven to 350°F. Coat 13- x 9-inch baking dish with spray. Place sausage in large sauté pan on medium-high; cook 6–8 minutes, stirring to crumble meat, until no pink remains and sausage is 160°F. Drain and let stand to cool 10 minutes.
- Whisk in large bowl: eggs, cream, onions, salt, and pepper until blended. Spread hash browns in prepared baking dish. Top with sausage and ½ cup of each cheese. Pour egg mixture evenly over hash browns. Top with remaining ½ cup of each cheese.
- Bake 25–35 minutes until top is golden and center is 160°F. Remove from oven and let stand to cool 10 minutes before serving. Serve with ketchup, if using.
