Roasted Tomato Chop Salad with Chicken

Ingredients

  • 2 oz chunk (or crumbled) feta cheese
  • 1 Deli oven-roasted chicken
  • 10 oz grape tomatoes
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar
  • 1 sunflower (or sweet kale) chopped salad kit (10.9–11.3 oz)
  • ¼ cup cooked bacon pieces
  • ½ cup crispy fried onions

Steps

    1. Crumble cheese (½ cup). Shred chicken (white meat only; about 2 cups). Preheat large sauté pan on medium-high 2–3 minutes. Combine tomatoes, oil, salt, and sugar; place in pan. Cook and stir 3–5 minutes until tomatoes start to burst.
    2. Combine salad kit ingredients in large bowl. Add warm tomato mixture to bowl with salad kit and toss to coat.
    3. Arrange salad on serving platter; top with chicken, feta, bacon pieces, and crispy onions. Serve.
