- Parchment paper
- 3 teaspoons fresh thyme, divided
- 1 teaspoon fresh rosemary, divided
- 1 teaspoon fresh oregano, divided
- 1 small red onion
- 2 large sweet potatoes
- 8 oz hickory smoked ham steak
- 3 tablespoons + 2 teaspoons olive oil, divided
- 3 teaspoons chopped garlic, divided
- 2 cups mini sweet pepper rings
- 2 teaspoons kosher salt, divided
- ¾ teaspoon pepper, divided
- 4 oz gourmet mushroom blend
- 1 bag baby spinach (5–6 oz)
- 3 cups water
- 6 large eggs
- Hot sauce (optional)
Steps
- Preheat oven to 425°F. Line baking sheet with parchment paper. Chop thyme, rosemary, and oregano finely. Slice onion thinly. Peel sweet potatoes, then cut into ½-inch chunks (2 cups); chop ham into bite-size pieces.
- Combine in large bowl: 3 tablespoons oil, 2 teaspoons each garlic and thyme, and ½ teaspoon each rosemary and oregano. Add sweet potatoes, pepper rings, 1 teaspoon salt, and ½ teaspoon pepper; toss to coat. Transfer to prepared baking sheet and bake 22–25 minutes until potatoes are tender.
- Preheat large, nonstick sauté pan on medium 2–3 minutes. Place ham in pan and cook 3–4 minutes, stirring occasionally, until golden and 165°F. Remove ham from pan.
- Add remaining 2 teaspoons oil to same pan; stir in mushrooms, onions, spinach, and remaining1 teaspoon garlic; cook and stir 2–3 minutes until mushrooms are tender. Remove from heat and return ham to pan; keep warm until ready to serve.
- Place ½ cup water each into 6 (8 oz) microwave-safe bowls (or mugs), then crack 1 egg carefully into each. Microwave individually on HIGH 1 minute (for soft poach) or until 160°F. Combine potato mixture with ham mixture; top with poached eggs. Sprinkle with remaining 1 teaspoon thyme, ½ teaspoon each rosemary and oregano, 1 teaspoon salt, and ¼ teaspoon pepper. Top with hot sauce, if using. Serve.
