    Ingredients

    • 1 Publix Bakery Baguette
    • 3 tablespoons + 2 teaspoons olive oil
    • 1 teaspoon kosher salt, divided
    • 1 teaspoon pepper, divided
    • 8 peeled/deveined large shrimp
    • 1 avocado
    • Zest and juice of 1 lemon

    Steps

      1. Preheat oven to 350°F. Slice bread diagonally into eight ½-inch thick slices. Coat both sides of bread with 3 tablespoons olive oil and place on baking sheet; season with ½ teaspoon salt and ½ teaspoon pepper. Bake 5-6 minutes or until toasted.
      2. Toss shrimp with remaining 2 teaspoons olive oil, ½ teaspoon salt, and ½ teaspoon pepper. Place shrimp on baking sheet; roast 10 minutes or just until shrimp turn pink and opaque. Remove from oven; let stand 2 minutes to cool.
      3. Peel and slice avocado; toss with lemon juice. Place avocado slices on each baguette slice. Top with shrimp and lemon zest.
