Roasted Pork Loin with Apples

Ingredients

  • 2–3 lb pork loin roast
  • 2 tablespoons pork spice rub mix
  • 1 large sweet or tart apple, sliced
  • 1 medium onion, sliced

Steps

    1. Preheat oven to 400°F. Rub pork with seasoning on all sides and place on roasting rack. Add apples and onions and bake 1–1 ½ hours or until pork is 145°F and tender.
    2. Let pork stand 10 minutes before slicing.
Other Preparation Methods
    • Braise: Season a 2–3 lb pork loin roast with ½ teaspoon each seasoned salt and pepper. Place in a large stockpot with 4 cups apple juice and 1 cup each celery, onions, and peeled quartered potatoes. Cook on medium-low 1–1 ½ hours or until pork is 145°F and tender. Let pork stand 10 minutes before slicing.
