Roasted Pork and Cilantro Cream

Ingredients

  • 1 tablespoon salt-free southwest seasoning
  • 1 pork tenderloin (about 1 lb)
  • ½ teaspoon kosher salt
  • ¼ cup mojo marinade
  • 3 tablespoons fresh cilantro, coarsely chopped
  • 1 tablespoon green onions, coarsely chopped
  • 1 lime, for juice
  • ¼ cup fat-free sour cream

Prep

  • Preheat oven to 450°F.
  • Chop cilantro and green onions.
  • Squeeze lime for juice (1 tablespoon).

Steps

    1. Preheat oven to 450°F. Season pork with southwest seasoning and salt, then place in baking pan. Pour marinade over pork; bake 15–18 minutes and until 160°F (for medium). Let stand 2–3 minutes before serving. Chop cilantro and green onions. Squeeze lime for juice (1 tablespoon).
    2. Combine sour cream, lime juice, green onions, and cilantro until blended. Slice pork and drizzle with sauce. Serve.

Sweet and Spicy Mash

Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon canola oil
  • 1 teaspoon salt-free southwest seasoning
  • 2 teaspoons agave nectar (or honey)
  • ½ teaspoon kosher salt

Prep

  • Peel sweet potatoes; cut into small bite-size pieces (4 cups).

Steps

    1. Peel sweet potatoes; cut into small bite-size pieces (4 cups). Place sweet potatoes in microwave-safe dish and cover; microwave on HIGH for 8–10 minutes or until beginning to soften.
    2. Add remaining ingredients; mash until smooth. Serve.

Serving Suggestions

  • Complete your meal with queso fresco or feta cheese (to top sweet potatoes), steamed broccoli, Cuban bread, and cheesecake for dessert.
  • If you have leftovers, make quesadillas with the pork, cheese, and sweet potatoes.
