Recaito Pork Chops
Ingredients
- 4 boneless pork loin chops (about 1 ¾ lb)
- 1 teaspoon complete seasoning
- 1 tablespoon extra-virgin olive oil
- 4 cloves garlic
- 1 cup recaito seasoning sauce
- ½ cup white wine (or chicken broth)
- 1 lime, for juice
- 1 cup tomato trinity mix (diced fresh tomatoes, bell peppers, and onions)
- 1 tablespoon brown sugar
Steps
- Season both sides of pork chops with complete seasoning (wash hands).
- Preheat large sauté pan on medium-high 2–3 minutes. Place oil in pan. Add pork chops; cook 2–3 minutes on each side until browned. Meanwhile, chop garlic finely.
- Reduce heat to medium; stir in garlic, recaito sauce, and wine. Squeeze juice of lime over pork chops; cook 5–7 minutes, flipping once, until pork is 145°F.
- Remove pork from pan and cover to keep warm. Place trinity mix and brown sugar in pan; cook 2–3 minutes, stirring often, until sugar dissolves and vegetables are softened. Return pork chops to pan, flipping to coat with sauce. Serve sauce over pork chops.
Fried Potatoes and Onions
Ingredients
- 1 large yellow onion
- 28 oz white potatoes
- 2 cloves garlic
- 8 slices bacon
- 1 (5-gram) packet sazón with azafrán seasoning
- 2 tablespoons extra-virgin olive oil
Steps
- Slice onion thinly. Peel potatoes and slice thinly. Chop garlic finely. Cut bacon into bite-size pieces (wash hands).
- Preheat large sauté pan on medium-high 2–3 minutes. Place bacon in pan and cook 3 minutes, stirring occasionally.
- Stir in onions, potatoes, garlic, and seasoning. Cover and cook 10–15 minutes, stirring occasionally, until potatoes are tender. Drizzle with oil; serve.
Serving Suggestions
- Complete your meal with ripe plantains, fresh salad blend, Cuban bread, and guava pastries for dessert.
- Recaito is a mild, cilantro-based seasoning sauce that is also a perfect match for chicken or skirt steaks. For some spiciness, add a chopped serrano pepper to the finished sauce.
