Ranch Macaroni and Cheese Cups

Ingredients
  • Cooking spray
  • 8 tablespoons seasoned bread crumbs, divided
  • 4 oz diced ham
  • 1 (20 oz) package prepared macaroni and cheese
  • 1 teaspoon ranch seasoning mix (or taco seasoning)
  • 1 cup shredded sharp cheddar cheese, divided
Steps
  1. Preheat oven to 400°F. Coat 24-cup mini-muffin pan with spray and 3 tablespoons bread crumbs (discard any excess from pan). Chop ham.
  2. Combine macaroni, ham seasoning, ½ cup cheese, and remaining 5 tablespoons bread crumbs; press 1 heaping tablespoon mixture into each muffin cup. Bake 10 minutes.
  3. Sprinkle tops of cups with remaining ½ cup cheese. Bake 3–4 more minutes until cheese has melted and tops are golden. Let stand 10 minutes to cool. Serve.
