Ingredients

  • Cooking spray
  • 2 small apples
  • ½ cup egg substitute
  • ¼ cup coconut sugar
  • ¼ cup unsweetened applesauce
  • ½ cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • ¼ cup vanilla whey protein powder
  • ½ cup old-fashioned oats
  • ¼ cup almond flour
  • ½ teaspoon baking powder

Steps

    1. Preheat oven to 375°F. Coat 9-inch square baking dish with spray. Core apples and shred (1 cup), then place in large bowl. Add egg substitute, sugar, applesauce, and pumpkin puree; stir until blended.
    2. Combine pie spice, protein powder, oats, almond flour, and baking powder in second bowl; whisk until blended. Add dry ingredients to wet ingredients and stir until blended.
    3. Pour batter into baking dish; bake 30–35 minutes until wooden skewer inserted in center comes out clean. Let stand 10 minutes to cool (or chill overnight). Slice and serve.
